Pan Ji Cooked Food is a heritage hawker stall at Chinatown Complex Food Centre, renowned as one of the last remaining stalls in Singapore that still makes sachima (also known as sar kay mah) entirely by hand. Run by Mr Poon since 1983, the stall produces this traditional Chinese egg pastry through a labour-intensive process: dough is kneaded, cut into strips, deep-fried until golden, then bound together with malt sugar and coated in a fragrant glaze. The result is a crispy, sweet, chewy treat that has drawn comparisons to Rice Krispies squares but carries a depth of flavour and nostalgia that only handmade craftsmanship can deliver. Pan Ji also sells other traditional fried dough snacks, but the sachima remains its signature and its claim to fame. The stall has been featured in local media and food guides, with many Singaporeans regarding it as a custodian of a vanishing culinary art.
