Thye Hong Handmade Fishball Noodle is a legendary hawker stall at Ghim Moh Market and Food Centre, operating for over 40 years and renowned for its handmade fishballs and fishcakes. The stall was founded by two brothers who started as street hawkers at Alexandra Road before moving to Ghim Moh in 1977. Today, Mr Wee runs the stall single-handedly, continuing to prepare fishballs from fresh yellowtail at 5am each morning, shaping each one by hand so that no two are exactly alike. The fishballs are prized for their bouncy texture and briny, savoury flavour, while the handmade fishcakes, simply boiled and sliced rather than fried, offer a similarly pure taste of the sea. The noodles are tossed in a flavourful seasoning sauce with lard oil and crunchy pork lard, delivering a satisfying medley of savouriness and texture.
