Southeast Asia's first Moutai House is taking over the Fullerton Waterboat House at 3 Fullerton Road. CNA Lifestyle reported the public opening at the end of October. The Straits Times named 21 October 2026 and put the fit-out at $8 million. The official site is already live with a shop, a restaurant page, and a carnival registration form, so this is not a rumour. Raffles Place MRT is the walk. The river is the view.
Managing director Shi Yun Ding told CNA that Kweichow Moutai first reached Southeast Asia in 1954 via the Singapore River, opposite this same building. Opening here is the brand closing a 72-year loop. The three-storey conservation block, Swan & Maclaren in 1919, used to pump fresh water into ships. It is about to pump sorghum spirit into tasting glasses.
300 bottles, and one that matches 1965
The Moutai Experiential Centre is billed as a walk through ingredients, production, and flavour, using sight, scent, touch, and taste. The collection is more than 300 labels, from everyday bottles to rarities the brand values at up to $1 million. The first dedicated birth-year Moutai set in the region starts in 1965, the year Singapore became independent. Shi said locals keep asking for bottles that match a birth year or a wedding date. That is the merchandising idea, not a museum caption.
Two Singapore-only releases sit on top. The Discovery Collection Singapore uses a Nanyang-inspired label with Vanda Miss Joaquim. The Culture Collection Singapore comes with a pair of baijiu cups and recasts the classic bottle as a collectible. Hours for the centre, per ST: 10am to 10pm daily.
Imperial Treasure cooks Guizhou and Huaiyang
Imperial Treasure, the Michelin-starred Chinese group, runs a 45-seat restaurant on the same floors. CEO Kenny Leung told CNA the kitchen will cook Guizhou food, chilli, sour, fermented, and Huaiyang food, the Jianghuai school that leans on braise, steam, and knife work. The menu is not locked. Chefs are testing Moutai in marinades, flash-fries, braises, stews, and drunken dishes. ST lists lunch 11am to 3pm and dinner 6pm to 10pm daily.
The room copies a century-old ship cabin, timber, tight, first-class liner energy. That matches the Waterboat House's original job. If you have eaten Imperial Treasure at ION or Paragon, this is a smaller, more theatrical version, not a carbon copy of the mall dining rooms.
Sohaus on the roof, carnival on 9 October
Nutmeg Collective, the team behind Nutmeg & Clove, Last Word, and Draftland, runs the rooftop bar Sohaus. Colin Chia called it a modern social house, the city's living room above it all. The list: eight original Moutai cocktails and eight classics rewritten with Moutai-inspired flavours. ST hours: 5pm to midnight, Tuesday to Saturday. Baijiu in a highball is how a lot of first-timers will actually drink this spirit. That is the point.
Before the public opening, the brand is running Moutai Carnival Singapore on 9 October, during Formula 1 free practice FP1 and FP2. The official carnival page puts it at Moutai House and Light House, 100 seats, global recruitment, all-access pass with dining, shuttle, race viewing, and a gift. I would treat 9 October as a members' preview and late October as the real open. If ST's 21 October date holds, book Imperial Treasure that week. If CNA's "end of October" is the safer line, wait for the official Instagram @moutaihouse.singapore to post hours before you schlep down Fullerton Road.
