The Singapore Martini Club is open at Orchard Rendezvous Hotel, 1 Tanglin Road #01-01. Bar veteran Dario Knox, who also runs The Backdrop a few doors down at voco Orchard, built a vintage train cabin on the street and filled it with more than 50 martini variations. The room is a carriage, including the overhead racks
The facade already looks like a luxury train. Inside, seats copy a carriage, windows are vintage-styled, and metal racks sit overhead. If you book, a retro mini suitcase on the table carries your name. That is a lot of theme. Knox has more than two decades in Singapore bars, including The Other Room, which has placed on Asia's 50 Best Bars lists. He knows when a prop is doing work and when it is just Instagram. The suitcase is the second kind. The stirred drinks are the first.
Most cocktails here are stirred, not shaken, which is the opposite of Bond and closer to how a dry martini should be built. The menu splits into flavour groups: zesty, savoury, tea, fruity, herbal, plus riffs and dry classics. Each drink has a visual scale for sweet-sour, sour-savoury, and sweet-dry. That is useful if you have never ordered a martini and do not want to fake it with the bartender.
What to drink if you are not a gin purist
Italian Caprese martini is S$26, tequila-based, with tomato, basil, and oregano, plus a basil-mozzarella garnish that looks like the salad. Tokyo spice martini is S$25, also tequila, with shichimi togarashi. Chua compared it to a Bloody Mary. Karuizawa martini is S$25, vodka, with green apple, shiso, celery, and lime. Swiss choco martini is S$28, vodka with cacao and Pedro Ximenez sherry, for people who want dessert without leaving the glass.
If you actually came for a stiff gin drink, order the Sub-Zero dirty martini at S$36. Gin, brine, vermouth, chilled below zero, poured tableside. The Gibson is S$28 and arrives with a large balsamic-marinated onion. Those two are the purist test. Everything else is a flavoured riff wearing a martini name. That is not an insult. It is how you fill 50 lines without 50 gins.
Food is tapas, not dinner
The kitchen is small on purpose. Tuna belly tartare is S$28. Red pepper hummus is S$13. Olives come in four variations from S$12. Eat before you arrive if you need a meal. Tanglin Road at 1am is not Boat Quay. The hotel lobby next door means you can leave without hunting a taxi in the rain. Two nights closed a week is the trade-off. Do not walk up on a Sunday. If you want a classic martini without the train set, there are quieter hotel bars on Orchard. If you want to try five flavours in one sitting and photograph a suitcase with your name on it, this is the September opening that fits.
