Cloudmills Opens Behind Orchard Towers With Unagi Shio Pan and a Live Binchotan Grill

Cloudmills opened in late August 2026 at #01-01, 1 Claymore Drive, the back of Orchard Towers rather than the main Orchard Road strip. The takeaway bakery is the first bakery concept from Cloud Restaurant Group, the team behind Cloudfields in Outram, with the menu built by Genevieve Lee, MasterChef Singapore Season 1 runner-up and the baker behind Sourbombe and the now-closed Shio & Sato.

Prices run from $2.20 to $7.20. Nothing on the counter crosses $8, which is the point. Time Out Singapore counted more than 25 sweet and savoury items on a typical morning, built from five bases: doughnuts, sankaku triangle salt bread, madeleines, laminated pastries, and shokupan. Lee told AsiaOne the menu is a chef's version of tapas, flavours you usually meet as a dish, recast as something you can eat walking back toward Orchard MRT.

Unagi Moon and the binchotan counter

The $7.20 Unagi Moon is the dearest item and the one the queue talks about. Thick unagi, grilled on a binchotan grill beside the display, sits with tamagoyaki and a soy-marinated egg yolk inside a seeded sankaku shio pan. Time Out liked the structure of the bread more than the smoke. The bun holds. The char is quieter than the live grill suggests. The banh mi at $6.90 uses the same triangle salt bread, this time with binchotan-grilled pork, pickled carrot and radish, herbs, and garlic mayo. It is a pocket, not a baguette, and it is filling enough for lunch if you add a drink.

Staff grill proteins to order when you pick a savoury. That is the whole pitch of the grill. 8days filmed Lee at the counter saying she wants people to watch the unagi go on the fire, then walk out with it still hot. The kitchen does not reheat finished bakes. If you want something warm, order the grilled items, not a doughnut that has been sitting.

Doughnuts that read like tapas, and a sweet case that sells out

The savoury doughnut line is where Lee's tapas idea is loudest. Pan con Tomate at $6.90 is a long doughnut with tomato-garlic paste and two white anchovies. The Charcuterie Board at $7.20 is a glazed doughnut with fig jam, brie, and prosciutto. There is an nduja mussels and fennel version at $6.90. AsiaOne also flagged Kombu-chan, a $3.50 savoury madeleine with lime, kombu, and cream cheese.

On the sweet side, Blueberri Ever is $4.90, a purple-glazed doughnut with blueberry compote and mascarpone. Hachi Lemon is $4.90. Strawberri Fields and Mango Mochi sit at $6.90. Time Out found the mango mochi pretty and a little thin on fruit, two cubes on top rather than a stuffed centre. The plain sankaku shio pan is $2.50. It is denser than Shio & Sato's old salt bread, built as a carrier, not a solo snack. That will annoy anyone who came only for the old shio pan. It will make sense once you put unagi in it.

Drinks run $5 to $10: espresso drinks, coconut cream and tiramisu lattes, and house cold-brew teas. Seating is a few camping chairs outside, next to Ao, the Japanese restaurant from the same group. It gets hot. Takeaway is the sane move.

How early to queue on Claymore Drive

Time Out's visit had a line by 10.45am, 15 minutes before opening, and the case often emptied within an hour. AsiaOne listed 11am to 7.30pm daily. Treat 7.30pm as a ceiling, not a promise. Go at 11am if you want Unagi Moon. The unit faces EtonHouse International School, opposite Claymore Connect, a short walk from Orchard Towers' Claymore Road side rather than the ION Orchard entrance. Orchard MRT is the nearest station. Walk out toward Orchard Towers, then around the back. Do not look for it inside the mall.
