Osteria Mozza reopens at ION Orchard on 7 September 2026. Nancy Silverton's only Asian restaurant left Hilton Singapore Orchard on 31 July and is moving into #03-14B/15B on Level 3, next to Louis Vuitton. The new room cannot take a traditional wood-burning oven, so the round puffy pizza is out. In its place is pizza alla pala, the long, thin, Roman-style paddle pizza Silverton told CNA will be thinner and crispier.
Why ION, and why pala instead of wood fire
OUE Restaurants COO Andrew Ing told The Business Times the mall shift turns Mozza from a destination hotel restaurant into a place that can fit a shopper's day. Silverton put it more bluntly: the hotel had a dual-layer of hotel expectations and ownership. At ION, OUE runs the restaurant as a standalone. Head chef is Ammie Khoo.
The pala dough is a practical answer. Silverton said the Hilton dough needed wood fire. ION does not have that oven, so she wrote a new dough she also thinks is more delicate for a mall. Pala is the long wooden board used to slide the pizza in. Expect an oval, fewer toppings, more crunch. Piadina sandwiches, pizza dough used as a street-food wrap, are also on the expanded all-day plan.
The official site still leads with California-Italian cooking, handmade pasta, and the mozzarella bar. Those stay. 8 Days listed Hilton-era prices such as Meat Lover pizza at S$45, burrata at S$34, and Nancy's Chopped Salad at S$30. Treat those as a floor, not a guarantee. Confirm the ION printed menu on 7 September. The Los Angeles Osteria Mozza holds one Michelin star. The Singapore restaurant does not claim that star.
Truffle soft serve, Saturday brunch, and the sets already listed
Silverton is more excited about dessert than she is about the pala story. The new soft-serve list includes a truffle flavour with brown-butter topping. She told CNA that cup might be the one that puts the ION room on the map. That is a chef talking her book, but it is also a reason to skip pasta if you only have 40 minutes after a Louis Vuitton browse.
The restaurant's own What's On page, already pointing at the ION address, lists Saturday brunch at S$108++ per adult, with live pizza and pasta stations and tiramisu sent tableside. Beetroot panzanella, seared seabass, blueberry pancakes, porchetta eggs Benedict, and grass-fed steak and eggs are named. Campari cocktail free-flow is an extra S$58++. Champagne and cocktail free-flow is S$88++. Children 6 to 12 are half price. Five and under eat free.
Family-style sharing for tables of six or more is S$48++ lunch and S$78++ dinner, last order 9pm, full-table participation required. An all-pasta tasting, four portions plus dessert, is S$88++. Walk-ins are accepted. Friday and Saturday dinner still needs a reservation if you hate a wait. Corkage is S$80 a bottle, waived if you buy one of the same size. Cakeage is S$20. The kitchen is not halal-certified and will try to cook without pork or lard on request.
What happens to the Hilton room, and who should book week one
Chi Spacca, Silverton's Los Angeles grill, takes the Hilton space in the fourth quarter of 2026 as a one-year residency. That is a different article. The ION opening is the September story. If you already liked Mozza at the Hilton, go in the second week, not opening night. Pala pizza and a new oven take a few services to settle. If you never went because a hotel lobby felt like a special occasion, ION is the easier first visit: mall parking, shopper hours, a mozzarella bar you can actually use at lunch. Skip it if you wanted the wood-fired blister from the old room. That pizza is gone.
